For the avid traveler looking to see multiple destinations and experience a range of cultures but also get the most bang for your buck, cruising is the way to go. On my most recent travel and food adventure, I boarded the Azamara Journey Club Cruise to experience Tuscany and Provence. Whether it was in a classic port like Rome or dining in one of the ship's restaurants, I was given the royal treatment: a mix of local delicacies coupled with high-end dining experiences.
While on board, Azamara offers a range of dining options, from poolside grilling to international buffets. It has two specialty dining restaurants, a seafood and a steak concept, as well as the main dining room. Depending on if we had a long day on land, we had the choice to either have multiple courses in the dining room or to sample one of the international buffets followed by the popular gelato cart.
The luxurious ports of call included Rome, Florence, Monaco, St. Tropez, Nice, and Elba. When in Italy, we were in search of the perfect gelato, and in the South of France, an exquisite cheese plate. In either locale, espressos were our drink of choice, a perfect match for an afternoon of sightseeing and people-watching.
The beauty of the trip was how easy it was to grab a bite on board and how simultaneously thrilling it was to go in search for one on land.
Here is a list of 5 delicious foods to enjoy during the cruise:
1. Sea Bass
When in Rome (no pun intended), we made our way to the Jewish ghetto for an authentic experience filled with artichokes. We ended up in Nonna Betta, where if you weren't ordering their house specialty, fried artichokes, you were clearly doing someone wrong. While we began our meal with the simple yet amazing flash-fried artichoke dish, we continued with the sea bass, the local fish special of the day. We opted for the whole fish option and deboned the sumptuous treat ourselves. Perfectly seasoned and lightly dressed in olive oil and lemon, it was the smart eater's way to kick off a weeklong cruise. When we came up for air in between delicious bites, we noticed the restaurant filled, with mostly priests and locals. Obviously, a restaurant home-run.
2. Risotto with Zucchini Flower
Just outside of Florence, nestled upon a hilltop, is the small, town of Maiano. The day the ship docked in Florence, we decided to explore beyond the city limits in search of an authentic Tuscan lunch. We discovered Trattoria di Maiano, a local spot with sweeping views of the hillside. We happened to be the only diners eating for lunch and were treated to fantastic service. While our appetizers of prosciutto and melon and buffalo mozzarella and tomato were as fresh as can be, the dish that was awe inspiring was the risotto with fresh zucchini flower. The rice cooked to perfection was creamy, a perfect vehicle for the delicious zucchini flower.
3. Baci Gelato and Hazelnut Combo
While strolling the streets of St. Tropez, pretending to be famous writers who once sought inspiration from the quaint and beautiful scenery, quite frankly, we became peckish. Having already grabbed lunch on board, we just needed a snack to tide us over. While strolling I spotted a woman carrying a Ladurée bag and was in hot pursuit. We found the elegant shop and bought a variety of four macarons to go. Planning to eat them while staring at the yachts parked in the harbor, we saw an outrageous line form. It was a gelato store on the corner, and we wanted to taste (figuring the macarons would last until evening) but alas were discouraged by the line. We walked a few blocks down and discovered another gelato shop, but this one run by Italian immigrants who now call St. Tropez home. I sampled the baci flavor (chocolate with nuts, similar to the famous Italian candy) alongside the mainstay, hazelnut. It was a match made in dessert heaven.
4. Rib-Eye Steak with Side of Creamed Spinach
The best specialty restaurant on board the Journey, in my humble opinion, was the steakhouse, Prime C. We had a table for two facing the back of the ship, an outstanding setting for a romantic meal. They catered to my gluten allergy and suggested I try one of the steak dishes on the menu. I selected the bone-in rib-eye steak with a side of creamed spinach. There wasn't anything over-the-top about the meal and I reveled in its simplicity. Grilled to perfection, seasoned lightly, the rib-eye was an onboard meal highlight.
5. Veal Tenderloin
Given the multitude of dining options, I only had the pleasure of eating in the main dining room, Discoveries, twice. The menu changes daily but also has signature dishes available every evening. After a few beginning courses to whet our appetite, we came to the showstopper, veal tenderloin. The meat was moist and tender and came in a modest portion, perfect for a multicourse meal. It was by far the best dish I had in the dining room and quite a perfect way for me to wrap up the evening, before hitting the nightclub onboard.
5 Favorite Carnival Cruise Line Desserts
It’s no secret that Carnival Cruise Line knows how to do dessert well, and is known for a few ultimate favorites. I took a look around the internet, and asked guests in a few social media groups what their onboard favorites were. These seem to be the top five, so enjoy our Carnival dessert countdown!
5. Tiramisu
Found in the Italian restaurant Cucina del Capitano, Tiramisu is a classic Italian dessert. Lots of cruisers mentioned that this was one of their favorite desserts aboard the ships, and it’s not hard to understand why. There’s just something about soaked lady fingers, marscapone, and a chocolate finish that begs to be devoured.
4. Grand Marnier Soufflé
Thankfully, this is a dessert that is found right in the ship’s main dining room. This sweet, mouth-watering dessert received several comments – and some guests even dared to say that it is better than the warm melting cake. Plus, it’s served with an orange vanilla sauce, so how could you go wrong?
3. Banana Split
When I think of fancy cruise desserts, I don’t normally think of a banana split. Apparently though, Carnival knows how to do them right. This is actually found on the kid’s menu, but there was a great number of adults that said they can’t resist ordering it, anyway. But who am I to judge… are there really many that can really resist smooth ice cream, bananas, and delicious sauces?
2. Creme Brûlée
Found on the American Feast menu during formal night, the Vanilla Creme Brûlée received many high remarks among frequent Carnival guests. It’s such a special dessert, and really does convey that this evening is more special than the others. A warm, creamy interior with a hard, sweet top layer is just what any sweet tooth needs to end an elegant meal.
1. Warm Chocolate Melting Cake
Carnival’s signature Warm Chocolate Melting Cake.
There is no way this wasn’t going to come in as the very top dessert aboard Carnival’s ships. Long-time guests and newbies alike rave about this warm chocolate dish, and scour the internet to find the real recipe straight from the onboard chefs. (It’s right here!) Served with vanilla ice cream, it’s the perfect balance of hot, cold, and gooey for the ultimate after-dinner dessert.
Honorable Mentions
These desserts got a few comments from cruisers too, so I figured I should include them: the chocolate chip cookies in the Lido Marketplace, the chocolate sampler in the steakhouse, Bitter & Blanc bread pudding, the chocolate cake from the café, and the S’more’s Parfait.
All Aboard the Ultimate, Super Luxe Food Cruise
That’s Harry talking, the piano player aboard the Seabourn Odyssey, a sleek iron-and-teak-railed ship heading to old-school Mediterranean ports like Barcelona and Tangier before moving into the Canary Islands, up to Lisbon, then across the Atlantic to dock in Fort Lauderdale.
Like Bogart in Casablanca, I’d asked for “As Time Goes By,” only because our ship was off to the real Casablanca in four days. I was wearing a tux and, like Bogart, sifting a single-malt Scotch as we shoved off in the rain, the vanishing Barcelona skyline flickering in the distance.
Although I’d never been on a cruise before, the idea of taking one always had allure, thanks to my late mother. She’d kept a diary of a trip in the early ’50s when she crossed the Atlantic from New York to study in Paris, where I now live.
Her pages included swarthy counts from Montenegro and an up-and-coming writer who had the malediction of sharing the same last name as Ernest Hemingway. “In a way I pity Russell Hemingway,” my mother wrote. “Something tells me a famous writing career is not in his cards.” There were lavish dinners and dances, not to mention a tiger housed below and a party one night to, yes, name the tiger.
Fellow travelers, enjoying dinner (including shrimp cocktail) at The Restaurant.
I realize now that the richness captured in my mother’s pages, and the richness I found aboard the Odyssey, were not just a result of the sumptuous surroundings. The feeling had to do with that ability to somehow dilate time. My older fellow passengers—I’m in my 40s, and let’s just say most of them had a few years on me—already knew this. I’d watch them in tasteful pairs laughing at the bar, or huddled around Kindles in the lounge, or fast-walking around the deck with trekking poles in those Patagonia fleece vests.
They all seemed well aware that the wondrous part of travel is going there, not getting there, and that this sort of trip is all the more enjoyable when the food is up to snuff. Hence the partnership that sprung up between the three-star Michelin chef Thomas Keller and Seabourn. It offers lucky passengers like me a culinary experience you don’t usually associate with cruise lines.
Before my trip I wondered, How gourmet could a kitchen really be when it’s serving hundreds of people on open water? Not very much, the Seabourn brass believes, which is why Keller’s dishes served on the Odyssey are prepared for just 50 to 60 people each night, depending on ingredients and demand.
Each day passengers receive a culinary briefing detailing what will be available at the four establishments on board. One or more almost always serves Keller meals, whether it be at The Patio or the main restaurant (The Restaurant, as it’s called) or The Colonnade—an elegant indoor/outdoor space. Seabourn’s plan is eventually to equip each of its ships with a new spot called The Grill by Thomas Keller the first recently opened on another Seabourn boat, the Quest.
Clear skies and open seas.
Considering there were roughly 430 passengers with me, it’s safe to say not everyone went “full Keller” each night. In fact, some said they preferred head chef Tomasz Borucki’s fare, focused on classics like Caesar salad and rosemary roasted chicken breasts. To crank it all out, Borucki, a native of Poland who’s spent ten years doing this, oversees a galley that employs 50 cooks, some of whom specialize in making Keller dishes the Keller way. “We’re very strict, and there’s lots of oversight with the Keller dishes,” Borucki told me. “Pictures are sent back to his team on land to guarantee everything’s being served correctly.”
His secret to cooking at such a high level on the water? Good sea legs, quality product and manpower, not to mention a habit of watching the time. “On a boat, you’re always against the clock—you have to know what’s ahead.”
I didn’t follow Chef Borucki’s advice once on board, I found myself in a sort of dreamlike limbo, drifting between conversations and moments and profound sleep as the Odyssey slowly advanced.
I honestly can’t remember what night it was that I danced with an older couple to Aretha Franklin’s “Chain of Fools” with my white bucks and blue blazer, wondering what those watching me were wondering. Is he a cashed-out social media billionaire? Is he their son? Is he a gigolo?
Nor do I recall where it was on the boat that a warm couple from California made me gasp with laughter when they confided that they were spending their retirement “skiing.”
“No, John, Skiing—as in Spending Our Kids’ Inheritance,” at which point we all raised our glasses of Champagne, cackling at their offspring’s lousy future.
I do know that Thursday I’d gone late into the night with my new best friend, Cookie, a fellow native from Washington, D.C., high-fiving over Remy Martins as our Redskins battled the Cowboys on TV. Because of that, I spent Friday morning on the sundeck’s chaise lounges, a Bloody Mary at the ready, wrapped in a flannel blanket like some 1920’s TB patient.
The only way to tether these moments together was to recall the various meals I enjoyed. Their descriptions scribbled inside my notebook triggered with Proustian recall tastes that came flooding back.
Keller's champagne and Granny Smith apple trifle.
There was the dinner on my first night, which I took as an homage to Thomas Keller’s American childhood. The hickory smoked barbecue ribs and baked beans, the braised spinach and the corn pone were served on wooden platters, family-style, giving everything a relaxed spirit amid the swanky surroundings. (Actually, none of the Keller meals were ever that fancy-pants, which was a relief.) The dessert, a Champagne and Granny Smith apple trifle, was not to be trifled with. Once I dug through the layers of vanilla custard, I hit pay dirt with the Champagne bubbling up through the sponge.
Later in the week I tried Keller’s haute dog, a pork sausage in a potato onion bun served with chowchow relish (blam!), sauerkraut, and french fries, which Keller named the Yountwurst—a wink to Yountville, California, home of his restaurant The French Laundry. I scarfed that during my chaise lounge recuperation my neighbor George had assured me that it “would help me grow my claws back.”
And then there was the breakfast I’d ordered up to my room one day when I decided to play hooky—a serviceable eggs Benedict with a heavy silver pot of coffee. The lazy morning in question was a way to take advantage of my sun-drenched balcony facing Africa. It was separated by a glass door to my suite, a one-bedroom couch setup that’s not huge—about 300 square feet—but seems larger because it’s all smartly thought-out. Oh, and the room featured my own personalized stationery and envelopes, and I’m always a sucker for that stuff.

Final Thoughts
I highly recommend La Cucina, especially if you have a dining package. I heard that the pizzas aren’t good, so don’t waste your time on those if you have the package. If you’re paying a la carte, then go for it because they’re less pricey than the other entrees and you may end up liking them after all!
The meal I had would have been really expensive since I got all four courses. Realistically, we probably would have gotten just one appetizer, two entrees and one dessert if we were paying a la carte. That would have been a reasonable price for a nice dinner out. Something to consider when weighing your options on purchasing a dining package or not.
La Cucina was my last pick for our dining package and just barely won out over Le Bistro, which I will probably try on another cruise. But after enjoying my meal there, I’m glad it made the cut.
