- 8 ripe plum tomatoes
- 2 handfuls of destoned olives
- olive oil
- splash of red wine vinegar
- 85 g mozzarella
- a handful of rocket
- Parmesan , for shaving

Method
- Halve and deseed 8 ripe plum tomatoes and dice them. Place in a bowl with 2 good handfuls of destoned olives. Season with sea salt and black pepper, a touch of olive oil and a splash of red wine vinegar.
- Spread this on to each pizza base, then sprinkle with pieces of mozzarella.
- Bake as above, then remove from the oven and sprinkle with some lightly dressed rocket and a good shaving of Parmesan cheese.
